Move the mouse all the way up or press SHIFT+COMMAND+’F’
Pick a text file and use Ctrl-I to change the ‘open with’ application.
It is probably the easiest way.

Before Ctrl-I, I actually tried to open ~/Library/Preferences/com.apple.LaunchServices.plist. It opens up XCode4 which is actually not an ideal tool to edit a plist.
Use -printf to print the full file name (including the directory)
Useful for construction of a Java CLASSPATH
After installing the Xcode 4 GM, it replaces the underlying Xcode executable of the Xcode icon on Dock to 4 too.
I hope this Xcode 4 is a lot more robust Xcode 3
